How to prepare the Mdardara.
Learn this famous and delicious Lebanese recipe and enjoy an authentic lentil and rice dish.

• 250g lentils
• 250g long grain rice
• 1L water
• 3 onions
• 100ml olive oil
• salt and black pepper
• soak the rice in cold water for 30 min.
• Meanwhile, cook lentils in the water for 40min until just cooked.
• Drain the lentils, keeping the stock aside for cooking the rice.
• Heat the oil and fry the onions for about 20 min until caramelized and crispy.
• Remove the onions from the oil. keep the oil to add to the rice.
• Drain the rice and place it in a pan. Pour in the reserved stock to cover 1cm above the rice level. Add the salt, black pepper and one third of the onions and stir together. bring the
rice to the boil for about 3 min to reduce the water down to the rice surface.
• Turn the heat down to low, cover the pan and cook for 15min.
• Fold the lentils into the rice and simmer for another 5min.
• Put the Mdardara in a plate and spread the remaining onions over the top.
• tips: to fry the onions and give them a nice brown color you can had some brown sugar while frying them.
