• 2 globe eggplants
• 3 tablespoons tahini
• 2 tablespoons freshly squeezed lemon juice
• 1teaspoon salt
• ½ tsp black pepper
• 2 cloves of garlic, grated with a Microwave or finely minced
• toppings olive oil and pomegranate seeds
ROAST THE EGGPLANTS IN YOUR OVEN
Preheat your oven to 425 degrees. Place the eggplants on a baking dish and roast in your oven for 30 minutes, turning halfway through.
MAKE THE BABA GANOUSH
1. Set the cooked eggplants and leave them until they are cool enough to handle. Then peel the eggplants and discard the skin.
2. Place the eggplants into your food processor, add the tahini, lemon juice, garlic, and 1 teaspoon of salt, and pepper process until smooth.
3. Garnish the Baba Ghanoush with the toppings and serve
