• 60 ml olive oil
• 2 chopped onions
• 4-5 ripe tomatoes, diced
• salt and black pepper
• 120 g coarse bulgur (bulgur wheat)
• Heat the oil and fry the onions until slightly brown.
• Add the tomatoes and salt, black pepper and stir together. Turn the heat to low, cover
the pan and simmer gently for 5 min so the tomatoes and onions cook in their own
juices.
• Rinse the bulgur, drain and add to the tomatoes. As soon as it boils, cover the pan, turn
the heat down to low and simmer for 15 min until all the moisture has evaporated.
• Remove from the heat and serve hot.
