How to prepare the Eggplants Mounazzaleh.
Learn this traditional Eggplants and chick peas dish from the Arab cuisine, famous across the Levant and also known as Mousakka’a.

• 5 tbsp olive oil
• 280 g onions chopped
• 6 garlic cloves
• 2 eggplants cubed about 600 g
• 300 g tomatoes chopped
• 1 tbsp tomato puree
• salt and black pepper
• 250 ml water
• 400 g cooked chickpeas
• Heat 4 tbsp of the oil and fry the onions and garlic until slightly brown.
• Add the eggplants and fry few minutes.
• Add the tomatoes, tomato puree, salt, black pepper and water and cook for 15 min.
• Add the chickpeas and cook for a further 15 min, allowing most of the moisture to evaporate.
• When cooking is complete, stir in the remaining olive oil for extra flavor, then turn onto a serving dish and leave to cool.
