• 1 Whole Pineapple
• 1/3 Red Cabbage, thinly sliced
• 3 Green Onion, thinly sliced
• 1 Carrot, grated
• 1/4 Cup Peanuts, crushed
• 1/4 Cup Teriyaki Sauce
• 1/4 Cup Lime Juice
• 1 tbsp Salt
• 1/4 Cup Pineapple Juice
• 1 tbsp Sesame Oil
• 1 Onion, halved, then sliced lengthwise
• 1 lb Boneless, Skinless Chicken thigh, chopped into bite sized pieces
• 2/3 Cup Teriyaki Sauce
• 1 Cup white rice, cooked and kept hot
• Cut pineapple in half lengthwise and scoop out the inside with a spoon. Cube 1 cup of the fruit and reserve with the juice and shells.
• For the slaw: In a large mixing bowl, combine cabbage, scallions, carrot, and reserved cubed pineapple. Mix in crushed peanuts, 1/4 cup teriyaki sauce, lime juice, salt, and 1/4 cup of the reserved pineapple juice. Set aside.
• For the teriyaki chicken: Heat sesame oil in a medium-sized pan over high heat. Add onion and chicken and cook for 5 minutes. Pour in 2/3 cup teriyaki sauce and cook for 7 minutes or until the sauce has thickened and the meat is cooked through.
• To serve:. Fill every pineapple with chicken mixture, rice and the slaw. Serve immediately.
