• 2 cups of vermicelli/noodles
• 2 tablespoons cooking oil
• 100 g of butter
• 1/5 cup sugar (depending how sweet you like it)
• 2 tablespoons cardamom powder
• 2 generous pinches of saffron
• 4 eggs beaten
• Directions:
• In a wide pan, heat 2 tablespoons of cooking oil and add 1/3 of the raw vermicelli. Lightly fry vermicelli until it gets dark, golden brown color.
Constantly stir all with a spoon, so it won't burn. Then add enough water to boil the fried raw vermicelli. Once the water starts to boil, add the rest of
non-fried vermicelli and cook for just 3-4 minutes and then drain. Place back into the pot and add to it butter, cardamom powder, sugar and saffron.
Mix all with the vermicelli and place on a small fire for about 10 min or until the sugar melts.
• Serve vermicelli hot on a large dish.
• Serve with omelet, for that:
• Heat about 3 tablespoons cooking oil and then when getting very hot add the beaten eggs. Tip the pan around to spread the uncooked egg. When dry
on top, turn the egg omelet over and cook for one minute more and top the vermicelli.
