• Make sauce. In a medium bowl, whisk together soy sauce, honey, sriracha, lemon juice and lemon zest.
• Meanwhile, heat oil in a large skillet over medium heat. Add the butter and the mushrooms then Season chicken with salt and pepper then add to hot skillet. Sauté until brown on all sides and mostly cooked through, about 6-8 minutes.
• Stir in garlic and ginger and cook until fragrant, about 1 minute.
• Add the sauce and bring to simmer. Reduce the sauce slightly and simmer until the chicken is completely cooked through . Add noodles and toss until completely combined.
• Fold in green onions. Serve immediately .
