800 g fresh tomatoes
1 onion, diced
1 carrot, chopped
1 - 2 cloves garlic, minced
1/4 cup chopped basil
1 tsp oregano
1 /2 tsp thyme
1 bay leaf
800 g Tomato sauce
1.5 cups vegetable broth
• Cut the tomatoes, put them in an oven plate drizzled with olive oil. salt and black pepper. Roast in the oven at 200 C for 25 min.
• In a pot, cook onions on medium high heat for 2 - 3 minutes until translucent.
• Add carrots and garlic and sauté for 2-3 minutes.
• Add roasted tomatoes and canned tomatoes.
• Add herbs and pour in broth.
• Simmer on medium low heat for 40 minutes. Once ready, remove the herb stems (bay leaf, thyme, and oregano).
Blend with an immersion blender and add salt to taste.
