Pesto Cherry Tomato Pasta

For the pesto sauce:
• 4 cups fresh basil
• 2 cloves garlic, minced
• ½ cup pine nuts
• 1 tsp salt
• ½ tsp black pepper
• ¼ cup of cold water
• ¾ cup shredded parmesan
• ½ cup heavy cream
• ¾ cup olive oil
For the pasta:
• 1 ½ cup al dente fusilli pasta
• 1 cup cherry tomatoes cut in half
• 1 cup mini mozzarella cheese
• 1 cup shredded parmesan
• using a food processor mixer, add the basil, garlic, pine nuts, salt, pepper, cold water, parmesan, and the heavy cream mix well and while mixing add the olive oil and mix for 2 minutes then set aside
• in a bowl, add the cherry tomatoes, pasta the poor the pesto sauce and mix until well combined
• transfer the pasta pesto mix to a baking dish and add over it the mini mozzarellas and the parmesan
• bake for 10 to 15 minutes until the cheese melts
