How to prepare the African Chicken Sosatie.

• Serves 4
• 1 tbsp olive oil
• 1 onion, finely chopped
• 1 garlic clove, crushed
• 2 bay leaves, Juice of 1 lemon
• 2 tbsp curry powder, 4 tbsp apricot jam
• 4 tbsp apple juice, salt & black pepper
• 675 g chicken fillet, 4 tbsp creme fresh (optional)
• Heat the oil in a pan. Add the onion, garlic and bay leaves and cook over a low heat for 10 minutes until the onions are soft. Add
the lemon juice, curry powder, apricot jam and apple juice with salt to taste. Cook gently for 5 minutes. Leave to cool.
• Cut the chicken into 2 cm cubes and add to the marinade. Mix well, cover and refrigerate for at least 2 hours or overnight. Thread
the chicken on to skewers, allowing the marinade to run back into the bowl. Grill or broil for 6-8 minutes, turning several times.
• Meanwhile transfer the marinade to a pan and simmer for 2 minutes. Stir in the crème fresh, if using and serve with the Sosatie.
• Note: soak the bamboo skewers in cold water for about 30 minutes, before draining and threading them. This helps to prevent the
skewers from burning.
