• Fish filet 500 g
• Fennel 10 g
• Cayenne pepper 5 g
• Olive oil 150 ml
• Tomato 2 pcs.
• Lemon 3 pcs.
• Red bell pepper 2 pcs.
• Green bell pepper 2 pcs.
• Onion 2 pcs.
• Freekeh 400 g
• Chicken stock 1 L
• 7 spices
• Ground cinnamon
• Salt
• Pepper
Marinating and Cooking the Fish
In a gastronorm, place the fish fillets. Add the olive oil, the lemon, the fennel, the cayenne pepper the salt and the pepper. Reserve in the cold for 30 minutes.
Preheat the oven at 200 degrees Celsius. Bake the fish for 12 minutes. Check with a knife before removing from the oven.
Keep the marinating sauce.
Spicy Sauce Prepping
Thinly chop the onions.
Dice the tomatoes, the green and red bell peppers and the chilli peppers.
Sweat the onion with an olive oil drizzle. Add the remaining vegetables and the spices. Cook for 10 minutes on medium heat then add the tomato sauce and the lemon juice. Cook at slow fire for another 15 minutes.
Freekeh Prepping
Combine the fish marinade to the chicken stock.
Sweat the onion in a pot with a drizzle of olive oil. Add the freekeh and cook like a risotto, gradually adding the chicken stock. At mid-cooking, add a bit of sauce and continue stirring and adding stock until reaching an al dente texture.
Most of freekeh come with their impurities. It is thus very important to select the grains before cooking them.
