• 175g butter,at room temperature
• 175g caster sugar
• 3 eggs
• 1 teaspoon vanilla extract
• 175g self-raising flour
• 1 teaspoon baking powder
• 3 tablespoons raspberry jam
• icing sugar and fresh raspberries to decorate
• Put the butter and sugar in a mixing bowl and beat together with a wooden spoon until pale and creamy.
• Beat the eggs and then the vanilla extract.
• Add the flour gradually and beat all the ingredients with an electrical hand mixer.
• Add the baking powder.
• Divide the mixture between 2 lightly oiled 18cm baking cake dishes,spread the top levels, then bake in a preheated oven at 180 degree for about 20 minutes.
• Put one of the cakes, top downwards on the serving plate,spread with the jam, then top with the second cake
• Dust the top with sifted icing sugar and decorate with raspberries on top
