How to prepare the Ramadan Kellaj.

1 pack of ready dry kellaj
4 cups milk
4 tbsp fine semolina
4 hipped tsp corn starch
1 tsp crushed mastic
3 tsp sugar
2 tbsp rose water
1 liter milk
Rose water and orange blossom water for the milk
Light syrup for serving
Mix 4 cups of milk with semolina, corn starch and sugar
Cook over medium heat whisking continuously to avoid lumps
When thickened, add mastic and rose water
Whisk then remove off heat and transfer to a wide plate and allow to cool completely
Refrigerate for an hour
When completely cooled, mix milk with rose water and blossom water
Place the kellaj sheet on the table and drizzle with the milk mixture
Fold the edges to a square shape
Place the desired amount of filling in the middle and close tightly
Heat vegetable oil and deep fry the stuffed kellaj until golden
Remove from oil and dip into light syrup
Remove from syrup and serve immediately
