How to prepare Penne Pasta with Homemade sun-dried tomato sauce and cheese.

1 penne pasta
1/2 cup sun-dried tomatoes with oil
2 1/2 cup crushed tomatoes
1 garlic clove, chopped
Freshly ground black pepper
1/2 cup chopped parsley
1/4 cup extra-virgin olive oil
2 1/2 cup Gruyere cheese
Preheat oven 180 degrees C. Lightly grease a 9" or 10" pie dish and set aside.
Bring an 8-quart stock pot of water to boil and generously season with salt. Cook pasta according to al dente package instructions,
less 2 minutes. Drain, but do not rinse and add back to stock pot.
Meanwhile, in the bowl of a food processor add sun-dried tomatoes, garlic, 1/2 teaspoon salt, 1/4 teaspoon pepper, 1/4 cup
parsley, and olive oil; pulse until well combined. Pour mixture into the crushed tomato, add the cheese and mix well, then poor the
sauce into pie pan and mix with pasta. Bake until cheese is melty, 25 minutes. Garnish with remaining parsley. Serve immediately.
