• 2 lb. skinless chicken breast, cut into 2" nuggets
• salt
• Freshly ground black pepper
• Extra-virgin olive oil, for drizzling
• 2 c. crushed corn flakes
• Olive oil
• 1/2 c. mayonnaise
• 1/2 c. sour cream
• 1 tbsp. Ketchup
• 1 tsp. cayenne pepper
• 2 tbsp. chopped green onions
• Preheat oven to 180°. Line rimmed sheet pan with parchment paper.
• Season chicken with salt and pepper. Drizzle chicken with olive oil and dredge in crushed corn flakes. Place chicken on sheet pan in a single layer. Bake until golden brown, 10 to 12 minutes.
• Meanwhile, in a small bowl combine mayo, sour cream, ketchup and cayenne.
• Serve popcorn chicken with Siracha dip and garnish with green onions.
