Salad dressing:
• 1/4 Cup White Vinegar
• 1 tsp Chopped Fresh Ginger
• 1 to 2 tsps Soy Sauce
• 1 tsp Honey
• 3 tsps Sesame Oil
• 3 tsps vegetable oil
• 2 tsps sesame seeds, toasted
Salad:
• 6 Cups Baby Spinach Leaves, washed, and dried
• 1 Large Carrot, shredded
• 1 Red Bell Pepper, thinly sliced
• 1/4 Onion, thinly sliced
• 1 tsp Sesame Seeds toasted
• 2 Cups Chicken, sliced
• 1 tsp Olive Oil
• In a pan, heat olive oil, add the sliced chicken and cook until golden, set aside.
• Combine all salad dressing ingredients. Whisk until emulsified.
• Combine all salad ingredients in a large bowl, except for the chicken slices. Add the salad dressing to the salad and toss.
• Serve the salad in the individual serving bowls and top with sliced chicken.
