• Chickpea 300
• Carrot 200 g
• Tahini 150 g
• Water 100 ml
• Olive oil 70 ml
• Lemon 50 ml
• Salt
Soak the chickpeas in room temperature water for 12 hours. Then boil them for 45 mns on medium fire.
Chill them in the freezer.
Boil the carrots after having sifted them in a pan with olive oil.
Keep the chickpeas’ texture slightly firm.
In a blender, add the chickpeas, the carrots and the water. Process them until obtaining a more or less homogeneous paste. Do not hesitate to do it in 3 times, by re- centring the mixture with a spatula.
In order to obtain the best possible colour, use frozen chickpeas.
Add the salt and process.
Add the tahini little by little. Add the lemon once all the tahini has been poured.
You can also reserve some carrots and make chips out of them.
