For the dough:
• 1 cup flour
• pinch of salt
• 1/3 cup water
For the pastrami mix:
• 50 g pastrami
• 1 tbsp finely chopped parsley
For the Yogurt:
• A cup of yogurt
• A teaspoon of cloves' powder
• A clove of garlic (crushed)
• salt
Mix the dough ingredients together to obtain soft dough.
Dust with flour and cover, rest about 20 minutes.
Finely chop the pastrami or process it, mix it with the chopped parsley.
Roll the dough on a dusted surface until very thin.
Using a round cutter, cut out small circles.
Place a small amount of the filling in the middle of the dough.
Close the dough, folding it in half and press well on the edges.
Then, bring the 2 ends together to form the shape of the sheesh barak.
Heat vegetable oil and fry the sheesh barak until golden.
Remove from oil and strain well.
To serve, mix ½ cup yogurt with 1 crushed clove of garlic and salt and mix well.
In the serving plate, place yogurt mix in the bottom of the plate and top it with fried sheesh barak.
Sprinkle a dash of sumac and some chopped parsley and serve.
