• 300 g Eggplant
• Salt
• 4 tbs Olive Oil
• 1 Medium Onion, peeled and finely chopped
• 2 Garlic Cloves
• 1/2 tbs Sugar
• 1 tbs Crushed Cumin
• Black Pepper grounded
• 2 Medium Sized Tomatoes cut into cubes
• 2 Hot Green Pepper
• 1/2 Cup of Grated Cheese
• Ready Dough
• Sesame Seeds
• Preheat the oven to 200 degrees.
• Divide the dough into halves. Garnish the first half over a surface sprinkled with flour, then use a biscuit cutter or a glass cup to cut the dough into a 9 cm to 10 cm diameter.
• Place a tablespoon of filling in the middle of each pan.
• Paint the edges of the circle with water and fold and cut in the shape of a crescent and put the sambusek in a tray greased with oil or in a non-stick tray.
• Repeat the same process with the rest of the dough to finally get 12 small sesame seeds.
• Brush the sambuseks with egg yolk and sprinkle with sesame seeds.
• Bake the sambusek for 30 minutes in a pre-heated oven until golden.
