How to prepare a Bulgur Salad with Pomegranate & Sumac dressing.

Serves 6
200 g medium-grain bulgur wheat
3 spring onions, chopped
1 bunch parsley leaves, chopped
½ cup extra virgin olive oil
2 lemons
1 large handful salad leaves
salt & pepper
Pomegranate & sumac dressing
few sprigs of French thyme or oregano
1 pomegranate seeds
1 tbsp pomegranate molasses
½ tsp Thyme
¼ tsp sumac
4 tbsp extra virgin olive oil
salt & pepper
Place the bulgur wheat in a large bowl, cover with warm water and soak for 1 hour or longer, if possible.
Drain in a fine colander and transfer to a serving bowl.
Slice the spring onions, then add to the bowl with the oil and lemon juice. Season generously with sea salt and black pepper.
Pick and finely chop the thyme leaves, then combine with the pomegranate seeds and juice from the pomegranate and the remaining dressing ingredients in a small bowl with some sea salt and black pepper.
Mix the salad leaves with the bulgur wheat, then toss through the dressing and serve.
Note: You can always add feta cheese on top.
