How to prepare the Baby Spinach and Arugula Salad.

115 g of white bread (cut into small cubes)
3 tbsp olive oil
75 g Arugula leaves
75 g baby Spinach
25 g Parsley leaves
1 tbsp Capers (rinsed and dried)
40 g Parmesan Cheese
Dressing
1 garlic clove (finely chopped)
1 tbsp Dijon Mustard
1 1/2 olive paste
5 tbsp olive oil
3 tbsp balsamic vinegar
Salt, black pepper
Prepare the dressing by mixing all the ingredients together, then put aside.
Heat the oven to 190 C. Mix the bread with olive oil, and garlic. Then place them on the baking tray.
Bake for 10 to 15 minutes, until their color is golden brown.
Heat a bit of olive oil in a pan, and add the capers and fry them until they are crisp.
Mix the arugula, parsley and baby spinach, and add to them the dressing and the bread.
Scatter on top the Parmesan cheese and the capers.
Serve Immediately.
