Learn these quick and simple steps on how to prepare Freekeh Risotto to add it to your iftar and enjoy a taste like no other during the holy month!

• 1 small Onion, finely chopped
• 2 Cloves Garlic, minced
• 1 Cup Mushrooms, chopped
• 1 tsp Olive Oil
• 1 Cup Freekeh, washed, rinsed and soaked for 2 hours
• 3 Cups of Chicken Broth
• ¼ Cup Parsley, chopped
• ¼ Parmesan, grated
• ¼ Cup Cooking Cream
• In a deep saucepan, saute onions, garlic and mushrooms in olive oil until soft.
• Add drained freekeh and saute over the heat to toast slightly.
• Add the chicken broth cup by cup stirring in between and cook until the water is absorbed and the freekeh is fully cooked.
• Stir in parsley, cooking cream and parmesan cheese and cook over low heat for 4 minutes
• Transfer to a serving dish and sprinkle cheese on top .
