Dough ready to use
1 can diced tomatoes
3/4 lb fresh mozzarella cheese, cut into small cubes
salt and pepper
1.In a bowl mix the diced tomatoes, mozzarella cubes and season with salt and pepper
2.Roll out the dough into disks of about 8 inches in diameter and 0.2 inch thick.
3. Fill each disk with the tomato mozzarella mixture, then fold into half-moon shaped pouches. Folding together the edges to seal the panzerotti.
4. Brush the panzerotti with olive oil then transfer them to the oven heated over 180 degree and bake 10-15min or till they change color.
5. Transfer them to a serving plate and serve warm.
