• 2 tsp butter
• 3 cups small cauliflower florets
• 1 onion, thinly sliced
• 2tbsp mild Indian curry paste or powder
• 2 cups diced tomatoes
• 100ml water
• 375 g raw shrimp, peeled and deveined
• 1 cup frozen green peas, thawed
• 2 tbsp. cornstarch
• 1 1/2 cups plain yogurt
• Chopped fresh cilantro or mint
• In a large nonstick skillet, melt butter over medium-high heat. Sauté cauliflower and onion for about 5 min or until onion is softened. Add curry paste and sauté for 1 min. Add tomatoes and bring to a boil and water, stirring. Reduce heat and boil gently, stirring often, for 8 min or until cauliflower is almost tender.
• Stir in shrimp and green peas. Whisk cornstarch into yogurt and gradually stir into pan; simmer, stirring constantly, for about 3 min or until sauce is thickened. Serve sprinkled with cilantro.
• You can enjoy it alone or with some rice.
