How to prepare the Nammoura (Arabian Semolina Cake).

• 15 to 20 almonds (for decoration)
• 150 g unsalted butter
• 160 g sugar
• 350 g fine semolina
• 2 tsp baking powder
• 200 g plain yogurt
• 1 tbsp tahini
• 1 tbsp melted butter
• 300 ml sugar syrup
• Soak the almonds in boiling water for 1 h, then remove and peel off the skins.
• Preheat the oven to 180 C.
• Cream the butter and the sugar.
• Add the semolina and baking powder to the mixture and mix well. Add the yogurt and blend well with the semolina mix.
• Grease a baking tin with the tahini and spread the semolina mixture evenly the tin.Score the top of the mixture into squares or diamonds with a knife and place an almond on each piece.
• Bake in the oven for 45 min.
• Remove from the oven and brush the surface with melted butter, then return to the oven for 2 min.
• While still in the baking tin, cut into pieces along the scored lines and pour the cold sugar syrup all over the cake and allow to cool before you transfer onto a serving plate.
