• 700g spinach fresh or frozen washed and chopped
• 50ml oil
• 15g pine nuts
• 2 onion chopped
• 500g coarse minced beef
• 1 lemon juice
• 1 tsp ground cinnamon
• 1/2 tsp ground black pepper
• 1 tsp salt
• 300ml boiling water
• Rinse and drain the spinach.
• Heat the oil in a large pan and fry the pine nuts until brown, remove and set aside.
• Add the onion to the oil and fry for about 10 min until golden brown.
• Add the meat and continue frying with the onions until the meat browns.
• Add the cinnamon, black pepper, salt and water and allow the mixture to boil for 5 min before you turn the heat down.
• Turn the heat down, cover the pan and simmer for 30 min.
• Stir the spinach and lemon juice, cover and cook for another 40 min, making sure the sauce has reduced. (If not, uncover the the pan and continue to simmer for a few minutes to allow the excess moisture evaporate.)
• Stir half the pine nuts back into the pan and continue to cook for another couple of minutes. Serve into a plate and sprinkle with the remaining nuts.
